stuffed zucchini

Ingredients
4
small zucchinis
cut in half length wise and scooped out to leave 8 boats
1
lb
hot italian sausage
crumbled
½
onion diced
1
clove
garlic
minced
¼
cup
parmesan cheese
salt & pepper
½
cup
tomato sauce
1
cup
mozzarella cheese
grated
Instructions
preheat oven to 375
cook sausage until browned, 5 minutes
add onion and cook 2-3 more minutes
add garlic and cook 1 minute
mix in parmesan cheese
season zucchini with salt & pepper
spread sausage mixture into each zucchini boat
top with a little tomato sauce and some mozzarella cheese
bake in oven for 25-30 minutes until zucchini is tender and cheese is browned
