stuffed zucchini

serves 4

Ingredients

  • 4 small zucchinis cut in half length wise and scooped out to leave 8 boats
  • 1 lb hot italian sausage crumbled
  • ½ onion diced
  • 1 clove garlic minced
  • ¼ cup parmesan cheese
  • salt & pepper
  • ½ cup tomato sauce
  • 1 cup mozzarella cheese grated

Instructions

  1. preheat oven to 375
  2. cook sausage until browned, 5 minutes
  3. add onion and cook 2-3 more minutes
  4. add garlic and cook 1 minute
  5. mix in parmesan cheese
  6. season zucchini with salt & pepper
  7. spread sausage mixture into each zucchini boat
  8. top with a little tomato sauce and some mozzarella cheese
  9. bake in oven for 25-30 minutes until zucchini is tender and cheese is browned
