pork tacos al pastor

Ingredients

  • 1 package pork chops thin sliced, sliced into ¼ inch strips
  • 1 fresh pineapple or fresh sliced
  • 1 cup pineapple juice
  • ¼ cup canola oil
  • 3 chipotle peppers and 1 tbl adobo sauce
  • 1 clove garlic
  • 1 white onion diced
  • ¼ cup cilantro leaves
  • monterey jack cheese
  • 8-10 tortillas

Instructions

  1. preheat cast iron skillet
  2. mix 1 slice pineapple, ¾ cup pineapple juice, canola oil, chipotle peppers, adobo sauce and garlic in a blender
  3. pour over pork in a plastic bag and marinate at room temp for 10-15 minutes or in the refrigerator for 1-2 hours
  4. chop remaining pineapple slices into chunks
  5. saute pork, until charred and cooked through, 5-7 minutes
  6. remove pork and saute onions about 2 minutes
  7. add pineapple and remaining ¼ cup pineapple juice and the pork and cook 1-2 minutes
  8. warm tortillas
  9. serve tacos topped with monterey jack cheese and cilantro
