baked fish and chips

Ingredients

  • 6 tbl olive oil
  • 3 large potatoes cut into ¼ inch fries
  • 1 ½ cups panko bread crumbs
  • 1 clove garlic grated
  • salt & pepper
  • ¼ cup dijon mustard
  • 2 eggs beaten
  • 1 cup flour
  • 1 lb tilapia cut into 1-inch-wide strips
  • malt vinegar

Instructions

  1. preheat oven to 500 degrees
  2. mix potatoes with 4 tbl olive oil and salt & pepper
  3. place potatoes on a sheet pan on bottom rack and bake for 15 minutes, turning potatoes
  4. heat 2 tbl olive oil and saute bread crumbs, garlic, salt & pepper until golden 4-5 minutes
  5. mix mustard and egg
  6. season fish with salt & pepper
  7. dredge the fish in flour. then egg/mustard and then panko
  8. place fish on a wire rack over a sheet pan
  9. reduce oven to 450 degrees
  10. bake fish on top rack and potatoes on the bottom until browned 10 -15 minutes
  11. serve fish with baked fries and malt vinegar
