tortellini with spinach garlic and tomato

Ingredients

  • 1 lb tortellini
  • 3 cloves garlic minced
  • 1 tbl olive oil
  • 1 package cherry tomatoes cut in half
  • 1 cup chicken broth
  • 1 bag fresh spinach
  • ½ cup parmesan cheese

Instructions

  1. cook tortellini in boiling, salted water
  2. saute garlic in olive oil 1-2 minutes
  3. add tomatoes and cook 4-5 minutes
  4. add chicken broth and spinach and season with salt & pepper
  5. cover and cook 3 minutes until wilted
  6. add tortellini and cheese and toss to combine
