buffalo chicken balls

Ingredients

  • 1 rotisserie chicken shredded
  • 1/3 cup hot sauce
  • 3 oz . cream cheese softened
  • 1 cup shredded cheddar cheese
  • 3 scallions chopped
  • 1 cup flour
  • salt & pepper
  • 3 eggs beaten
  • 1 cup panko bread crumbs
  • 1 cup canola oil

Instructions

  1. mix chicken, hot sauce, cream cheese, cheddar cheese and scallions
  2. form into golf ball sized balls
  3. season flour with salt & pepper
  4. place flour, egg and bread crumbs in 3 separate bowls
  5. dip chicken into flour, then egg, then panko and set aside
  6. heat oil in a deep pot and cook chicken until browned, 2-3 minutes in batches
  7. drain on a paper towel
