orzo salad

Ingredients

  • 4 cups chicken broth
  • 1/2 box orzo
  • 1 can garbanzo beans 15-ounce, drained and rinsed
  • 1 package yellow grape tomatoes halved
  • 1 red onion diced
  • red wine vinaigrette recipe follows
  • 1 cup basil slivered
  • 1/4 cup mint chopped
  • salt & pepper

red wine vinaigrette

  • 1/4 cup red wine vinegar
  • 1/8 cup fresh lemon juice
  • 1 tsp honey
  • salt & pepper
  • ½ cup olive oil

Instructions

  1. bring chicken broth to a boil and cook orzo as directed on package
  2. drain orzo and cool
  3. mix garbanzo beans, tomatoes and red onion with cooled orzo
  4. add red wine vinaigrette and toss to coat
  5. stir in basil, mint, salt & pepper
  6. mix all the ingredients for the red wine vinaigrette in a jar and shake
