cacio e pepe orzo

Ingredients

  • ½ box orzo
  • kosher salt
  • 3 tbl butter
  • 2 tsp coarse ground pepper
  • ¾ cup mix of locatelli and parmesan cheese

Instructions

  1. cook orzo in salted water, reserving ¼ pasta water
  2. as orzo cook, melt butter and simmer ground pepper for 2-3 minutes
  3. drain orzo when cooked and return to pot
  4. add butter, cheese and a little pasta water and mix to coat
