mozzarella en carozza

Ingredients

  • 3 large eggs
  • 1/2 cup milk
  • 1 cup italian bread crumbs
  • 1/4 cup grated parmigiano-reggiano
  • salt & pepper
  • 2 balls fresh mozzarella thinly sliced
  • 8 slices pullman loaf or any other white bread, crusts removed
  • canola oil for frying
  • 1 cup flour

Instructions

  1. beat together the eggs and milk in a medium bowl
  2. season with salt, & pepper
  3. mix bread crumbs and parmesan cheese
  4. divide the mozzarella between 4 slices of the bread
  5. put the remaining slices of bread on top of the mozzarella and press to close.
  6. add peanut oil to a deep pan until it is at least a 2-inches deep.
  7. heat over medium-high heat to 350 degrees
  8. dredge each sandwich in flour and shake off the excess.
  9. dip each sandwich in the egg mixture.
  10. dip the sandwich in the breadcrumbs
  11. working in batches, fry the sandwiches 2 minutes on each side
  12. drain on a paper towel and serve with a side or marinara sauce
