homemade cream of tomato soup

Ingredients

  • 2 tbl butter
  • 1 onion thinly sliced
  • 1 small carrot diced
  • 3 cloves garlic minced
  • 1 35 oz can plum tomatoes
  • 4 basil leaves
  • salt and pepper
  • pinch of sugar
  • 3 cups chicken stock
  • ¼ tsp allspice or nutmeg
  • 1 cup heavy cream

Instructions

  1. heat butter in a pot
  2. add onion and carrot and saute until soft about 7 minutes
  3. add the garlic and cook 1 minute longer
  4. add the tomatoes, 4 slivered basil leaves, salt & pepper, sugar, chicken stock and allspice
  5. bring to a boil and simmer for 25 minutes, covered
  6. puree with a hand blender and add the cream
  7. season with salt & pepper and serve
