boneless chicken savoy

Ingredients

  • 4 chicken cutlets
  • salt & pepper
  • 3 tbl olive oil
  • 4 cloves garlic
  • 1 tbl dried oregano
  • 1 tsp dried thyme
  • 1/3 cup grated locatelli cheese
  • 1 cup red wine vinegar

Instructions

  1. pre-heat oven to 450 degrees
  2. salt & pepper chicken pieces
  3. heat in 1 tbl oil in a cast iron skillet
  4. place chicken in the skillet and saute until golden brown on one side.
  5. blend together the 2 tbl olive oil, the garlic, the oregano, the thyme and the cheese in a paste.
  6. turn chicken over and spread evenly over the cooked side of the chicken.
  7. transfer skillet to the oven and bake 10 minutes until done.
  8. remove from oven
  9. add 1 cup of red wine vinegar to the pan.
  10. deglaze and bring to a boil
  11. spoon sauce over the chicken.
  12. serve chicken with the vinegar sauce.
