herb roasted chicken

Ingredients

  • 1 whole chicken cut-up or any chicken parts that you like
  • salt & pepper
  • 3 tbl butter softened
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 lemon cut in quarters
  • 1 onion cut in half
  • 6 cloves garlic smashed
  • 1 bunch scallions cut in quarters
  • 1 pint grape tomatoes cut in half
  • 1 tbl olive oil

Instructions

  1. preheat oven to 450 degrees
  2. season chicken with salt & pepper
  3. mix butter with thyme and rosemary
  4. spread butter all over the chicken pieces, over and under the skin
  5. place chicken in a roasting pan and scatter lemon, onion and garlic
  6. roast for 25 minutes
  7. toss scallion and tomatoes with olive oil and slat & pepper
  8. add to the pan cook 10 minutes more
  9. serve chicken with scallions and tomatoes and any pan juices
