heat a shimmer of oil in a cast iron skillet

roll out each dough to the size of the pan

cook dough on medium until bottom browns, turning as needed and pressing down any bubbles on top, 5 minutes

flip dough over in pan and top with 1 cup warm tomato sauce and ½ of the cheese, letting the bottom brown, 3 minutes
-
move pizza under the broiler to finish melting cheese

top with slivered basil and salt & pepper, let sit 3 minutes before cutting
-
repeat with second dough
