pan fried pizza

Ingredients

  • 1 pizza dough cut in ½
  • olive oil
  • 2 cups tomato sauce warmed
  • fresh sliced mozzarella blotted dry on paper towels
  • basil leaves
  • salt & pepper

Instructions

  1. preheat broiler
  2. heat a shimmer of oil in a cast iron skillet
  3. roll out each dough to the size of the pan
  4. cook dough on medium until bottom browns, turning as needed and pressing down any bubbles on top, 5 minutes
  5. flip dough over in pan and top with 1 cup warm tomato sauce and ½ of the cheese, letting the bottom brown, 3 minutes
  6. move pizza under the broiler to finish melting cheese
  7. top with slivered basil and salt & pepper, let sit 3 minutes before cutting
  8. repeat with second dough
