chicken pepperoni

Ingredients

  • mini pepperoni 1 package
  • 2 tbl olive oil
  • thin sliced boneless chicken breasts, or regular boneless breasts sliced in 1/2
  • salt & pepper
  • 3 garlic cloves thinly sliced
  • 1 tsp anchovy paste
  • 1 teaspoon red pepper flakes
  • 1 can crushed tomatoes 28-ounce
  • ¼ cup basil slivered
  • 2 cups shredded mozzarella cheese

Instructions

  1. preheat oven to broil
  2. in a cast iron skillet cook mini pepperoni in olive oil until they crisp and roll into a cup shape
  3. remove pepperoni and cook chicken in pepperoni oil 3-4 minutes per side
  4. remove chicken
  5. saute garlic, anchovy paste and red pepper flakes, 1 minute
  6. add crushed tomatoes, basil, salt & pepper
  7. simmer sauce for 15 minutes and turn off the heat
  8. return chicken to the pan
  9. top with mozzarella cheese and then pepperoni
  10. broil 3-4 minutes until brown
  11. serve with pasta

Recipe Notes

If you can find the mini pepperoni use them because they get crisp like bacon
