sauteed fish with lemon brown butter

Ingredients

  • 4 flounder or tilapia filets around 1 ½ lbs
  • 1 cup flour
  • 1 stick butter
  • salt & pepper
  • 2 tbl chopped parsley
  • juice of 1 lemon

Instructions

  1. season flour with salt & pepper
  2. dredge fish in flour
  3. heat butter in a cast iron skillet
  4. cook fish until golden brown on each side 3-4 minutes
  5. remove fish to a plate
  6. brown the butter
  7. remove from heat and stir in parsley and lemon juice
  8. pour over the fish and serve
