swedish meatballs

Ingredients

  • 2 tbl olive oil
  • 1 onion diced
  • 2 lbs meatloaf mix
  • ½ cup panko breadcrumbs
  • 2 eggs
  • ¼ tsp allspice
  • ¼ tsp nutmeg
  • salt & pepper

sauce

  • ½ stick butter
  • 1/3 cup flour
  • 4 cups beef broth
  • ¾ cup sour cream
  • salt & pepper
  • chopped parsley

Instructions

  1. heat 1 tbl olive oil in a skillet
  2. saute onion until translucent, 2-3 minutes
  3. mix meatloaf mix, onions, breadcrumbs, eggs, allspice, nutmeg and salt & pepper
  4. form in 1 ½ inch meatballs
  5. heat remaining 1 tbl olive oil in pan
  6. saute meatballs on medium high heat until browned on all sides 6-8 minutes and remove
  7. melt the butter in the skillet
  8. add the flour and whisk until lightly browned, about 1 minute
  9. add the beef broth and cook whisking until thick, about 2 minutes
  10. stir in sour cream
  11. season with salt & pepper
  12. return the meatballs to the pan and cook on low, stirring occasionally for 8-10minutes until thick and hot
  13. top with chopped parsley to serve over egg noodles
