greek shrimp and rigatoni

Ingredients

  • 5 tbl olive oil divided
  • 1 glove garlic minced
  • 1 16 oz can diced tomatoes
  • ½ cup white wine
  • salt & pepper
  • ¼ cup chopped basil
  • 1 tsp oregano
  • 1 ½ lbs shrimp peeled and deveined
  • hot pepper flakes
  • ½ box rigatoni
  • 8 oz feta crumbled

Instructions

  1. preheat oven to 400 degrees
  2. boil salted water for the pasta
  3. saute garlic in 2 tbl olive oil, 1 minute
  4. add tomatoes and cook 1 minute
  5. add the wine, basil, oregano, salt & pepper
  6. simmer for 10 minutes
  7. add the remaining 3 tbl olive oil to another pan and heat
  8. sprinkle shrimp with red pepper flakes, salt & pepper
  9. cook the shrimp for 1 minute until pink
  10. spoon the shrimp and any juices into a baking dish
  11. cover with tomato sauce
  12. sprinkle with feta and bake 10 minutes until hot and melted
  13. cook pasta according to package and drain
  14. serve shrimp over pasta
