corn griddle cakes with sausage

Ingredients

  • ½ lb breakfast sausage
  • 1 bag frozen corn
  • 1 cup cornmeal
  • 1/.2 cup flour
  • 1 tbl sugar
  • salt & pepper
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • cayenne pepper
  • 1 ¼ cups buttermilk
  • 2 eggs
  • 1 bunch scallions chopped
  • 4 tbl butter divided
  • orange-honey butter
  • 1 stick butter
  • ½ cup honey
  • zest of 1 orange

Instructions

  1. cook breakfast sausage in a cast iron skillet until browned
  2. remove and brown corn 5-6 minutes
  3. remove and wipe skillet clean
  4. mix flour, sugar, 1 tsp salt & pepper, baking soda, baking powder and a pinch of cayenne
  5. mix buttermilk and eggs
  6. add wet ingredients to dry ingredients and mix together
  7. fold in sausage, corn and scallions
  8. heat 1 tbl butter in cast iron skillet
  9. add batter to the pan to make corn cakes
  10. cook 2-3 minutes until brown and flip over
  11. cook 1-2 minutes more
  12. add additional butter between batches as needed
  13. serve with warm orange-honey butter

orange-honey butter

  1. melt butter and add honey and orange zest
  2. keep warm
