curry chicken

Ingredients

  • 1 chicken cut-up or any chicken parts
  • salt & pepper
  • 2 tbl butter
  • ¼ cup finely chopped onion
  • 2 stalks celery finely diced
  • 1 clove garlic minced
  • 2 tbl curry powder
  • 1 bay leaf
  • 1 apple cut into ¼ inch dice
  • ½ banana finely diced
  • 2 tsp tomato paste
  • 1 ½ cups chicken broth
  • ½ cup heavy cream

Instructions

  1. sprinkle chicken with salt & pepper
  2. heat butter in a cast iron skillet
  3. add the chicken skin side down, cook on high for 5-7 minutes
  4. add the onion, celery and garlic
  5. cook until vegetables start to get tender 5 minutes, turning chicken
  6. add curry powder, bay leaf, apples and bananas and cook 5 minutes, tuning stove to low
  7. add tomato paste and stir to combine
  8. add chicken broth and cover and simmer 15 minutes until chicken is done
  9. remove chicken and strain sauce through a sieve
  10. add sauce back to pan with heavy cream and chicken and bring to a boil
  11. serve hot
