mediterranean stuffed pork chops

Ingredients

  • 1 package frozen spinach thawed and squeezed dry
  • ½ cup crumbled feta
  • 1/8 cup sundried tomatoes chopped
  • zest and juice of 1 lemon
  • 1 package thick cut pork chops
  • salt & pepper
  • 1 tbl dijon mustard
  • ¼ tsp oregano

Instructions

  1. preheat broiler
  2. mix spinach, feta and sun dried tomatoes and lemon zest together
  3. make a slit down the side of the pork chop to create a pocket
  4. stuff the chops with the spinach mixture
  5. season with salt & pepper
  6. mix lemon juice, dijon mustard and oregano
  7. place the pork chops on a broiler pan and coat the top with ½ the mustard mixture
  8. broil 5 minutes and turn
  9. brush the other side with the mustard and broil 2-3 minutes more until cooked through
