Ingredients

  • 2 tbl canola oil
  • 2 cups panko bread crumbs
  • salt & pepper
  • 1/2 tsp cayenne pepper
  • 2 eggs beaten
  • 1 lb tilapia cut into strips

Instructions

  1. preheat oven to 450 degrees
  2. coat a sheet pan with oil
  3. season panko with salt & peppers
  4. dip fish in panko, then egg, then panko again
  5. place on the sheet pan and bake for 10 minutes, turning once
