shrimp and grits

Ingredients

  • 4 cups water
  • salt & pepper
  • 1 cup stone ground grits
  • 3 tbl butter
  • 2 cups shredded white cheddar cheese
  • ½ lb thick cut bacon diced
  • 1 lb shrimp peeled and deveined and patted dry
  • juice and zest of 1 lemon
  • 2 tbl chopped parsley
  • 1 bunch scallions thinly sliced
  • 1 clove garlic minced

Instructions

  1. cook grits in boiling, salted water for 20 minutes as directed on package
  2. add butter and cheese to cooked grits and stir to melt
  3. season with salt & pepper
  4. cook bacon in a skillet
  5. drain fat and cook shrimp for 1 minute
  6. add lemon juice and zest, parsley, scallions and garlic and saute for 2 minutes
  7. serve grits topped with shrimp

Recipe Notes

as the grits cook, stir them a couple of times to prevent sticking
