Ingredients
8
small red potatoes or a bag of tiny potatoes
2
tbl olive oil
salt & pepper
Instructions
preheat oven to 400-degrees
place potatoes in a cast iron skillet or sheet pan and toss with olive oil, salt & pepper
bake for 25 minutes and flatten slightly with a potato masher
broil potatoes on top rack for 5 minutes until crisp
