smashed potatoes

Ingredients

  • 8 small red potatoes or a bag of tiny potatoes
  • 2 tbl olive oil
  • salt & pepper

Instructions

  1. preheat oven to 400-degrees
  2. place potatoes in a cast iron skillet or sheet pan and toss with olive oil, salt & pepper
  3. bake for 25 minutes and flatten slightly with a potato masher
  4. broil potatoes on top rack for 5 minutes until crisp
