Ingredients

lb
ground chicken or turkey
1
can chipotle pepper in adobo sauce
7 ounce
1
tsp
black pepper
2
tsp
cumin
2
tsp
oregano
6
cloves
garlic
2
teaspoons
salt
1/2
red onion
quartered
1/4
cup
canola oil
soft and/or hard tortillas
guacamole
pico de gallo
shredded jack cheese
Instructions
heat 1 tbl canola oil in a pan and cook ground chicken 5-7 minutes
put chipotle peppers in adobo sauce, pepper, cumin, oregano, garlic, salt, red onion and canola oil in a blender
blend until smooth
pour ½ of sauce into cooked chicken and simmer 5-10 minutes
spoon chicken into taco shells and top with shredded jack cheese, pico de gallo and guacamole
Recipe Notes
the chicken is a little spicy, you can tone it down by adding fewer chipotle peppers
