stir fried pork and pineapple

Ingredients

  • 1 package boneless pork chops thin sliced, cut into 1 inch pieces
  • 2 tbl soy sauce divided
  • 3 tbl canola oil divided
  • 1 tsp corn starch
  • 2 tbl rice vinegar
  • 1 tbl sugar
  • 1 red pepper cut into 1 inch pieces
  • 1 yellow pepper cut into 1 inch pieces
  • 3 scallions cut into 2 inch pieces
  • 2 tbl ginger minced
  • 1 cup fresh pineapple chunks
  • 1 small red chili thinly sliced

Instructions

  1. mix pork, 1 tbl soy sauce, 1 tbl canola oil and corn starch
  2. mix 1 tbl soy sauce, rice vinegar and sugar together to make a sauce
  3. heat 2 tbl canola oil in a wok and saute the pork and ginger for 5 minutes
  4. add the red and yellow peppers and saute 2 minutes more
  5. add the scallions, pineapple, chili and sauce and saute until hot 1-2 minutes
