chicken with honey mustard sauce

Ingredients
1
large package chicken thighs
salt & pepper
1
cup
honey
½
cup
dijon mustard
¼
cup
white wine
¼
cup
canola oil
1
head curly endive or any lettuce you like
torn into pieces
red cherry tomatoes
halved
Instructions
preheat oven to 450 degrees
season chicken with salt & pepper and place in a roasting dish
mix honey, dijon mustard, white wine and canola oil and set aside ½ cup
pour remaining dressing over the chicken and marinate for 10 minutes
roast chicken for 30 minutes basting with the marinade
toss lettuce and tomatoes with ¼ cup dressing
serve chicken over the top of the salad and serve with remaining dressing
