chicken with honey mustard sauce

Ingredients

  • 1 large package chicken thighs
  • salt & pepper
  • 1 cup honey
  • ½ cup dijon mustard
  • ¼ cup white wine
  • ¼ cup canola oil
  • 1 head curly endive or any lettuce you like torn into pieces
  • red cherry tomatoes halved

Instructions

  1. preheat oven to 450 degrees
  2. season chicken with salt & pepper and place in a roasting dish
  3. mix honey, dijon mustard, white wine and canola oil and set aside ½ cup
  4. pour remaining dressing over the chicken and marinate for 10 minutes
  5. roast chicken for 30 minutes basting with the marinade
  6. toss lettuce and tomatoes with ¼ cup dressing
  7. serve chicken over the top of the salad and serve with remaining dressing
