pasta pesto peas and potatoes

Ingredients

  • 2 potatoes peeled and cut into ½ inch cubes
  • 1 lb bowtie pasta
  • 1 bunch basil leaves removed
  • 2 cloves garlic
  • 1 lemon juiced and zested
  • salt & pepper
  • ½ cup olive oil
  • 1 cup grated parmesan cheese
  • 1 bag frozen peas

Instructions

  1. bring a pot of salted water to a boil
  2. add potatoes and boil 5-7 minutes
  3. add pasta and stir and cook until done
  4. put basil, garlic, lemon juice, lemon zest, salt & pepper in a blender
  5. blend adding oil slowly through the top until smooth
  6. stir in cheese
  7. add peas to pasta and potatoes for the last 2 minutes of cooking
  8. drain and toss with the pesto
