smoked sausage jambalaya

Ingredients

  • 1 lb smoked sausage sliced ½ inch thick
  • 1 tbl canola oil
  • 1 red bell pepper finely chopped
  • 1 green bell pepper finely chopped
  • 1 onion finely chopped
  • 2 stalks celery finely chopped
  • 3 scallions finely chopped
  • 2 cloves garlic finely chopped
  • 1 lb white rice
  • 1 can diced tomatoes 28 oz
  • 3 ½ cups water

Instructions

  1. cook sausage in oil until browned, about 5 minutes
  2. remove sausage
  3. saute peppers, onion, celery, scallions and garlic until golden brown, about 10 minutes
  4. stir in rice, sausage, tomatoes, water and salt & pepper and bring to a boil
  5. cover and simmer until rice is cooked through, about 20-25 minutes
  6. let stand 5 minutes and fluff with a fork
