beef and bean taco casserole

Ingredients

  • 2 tbl canola oil
  • 1 ½ lbs ground beef
  • 3 tbl chili powder
  • 2 tsp cumin
  • 1 tsp oregano
  • salt & pepper
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 can pinto beans drained and rinsed
  • 1 16 oz . jar salsa
  • 1 bag tortilla chips
  • 3 cups shredded jack cheese
  • sour cream
  • shredded lettuce
  • 2 plum tomatoes chopped
  • 1 avocado diced

Instructions

  1. preheat oven to 350-degrees
  2. spray a 9 x 13 casserole dish with oil
  3. heat canola oil in a skillet
  4. add ground beef, chili powder, cumin, oregano and salt & pepper
  5. brown beef, breaking it up
  6. add the onion and garlic and saute for 5 minutes
  7. add the beans, and salsa and stir until thick
  8. lay half the chips on the bottom of the casserole dish
  9. cover with half the meat/bean mixture and then half the cheese
  10. add the rest of the chips, topped with the meat/bean mixture and then the rest of the cheese
  11. bake until hot and the cheese melts, about 20 minutes
  12. serve with sour cream, shredded lettuce, chopped tomato and diced avocado
