smoky poblano chili

Ingredients

  • 1 tsp olive oil
  • 1 package ground beef around 10 oz
  • salt & pepper
  • 1 poblano pepper diced
  • 1 onion diced
  • 1 bunch of scallions chopped, white and green separate
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 cup beef stock
  • 1 can kidney beans drained and rinsed
  • 1 28 oz can crushed tomatoes

Instructions

  1. heat oil in a skillet
  2. brown the ground beef, breaking it up as it cooks
  3. season with salt & pepper and chili powder
  4. remove the ground beef to a plate
  5. saute the poblano chili, the onion, the white part of the scallions and the garlic until slightly softened
  6. add the beef back in and season with chili powder and cumin
  7. add beef stock, beans and tomatoes and 1 cup water and bring to a boil
  8. reduce heat to a simmer and cook until thick, about 10 minutes
  9. serve the shredded cheddar cheese, sour cream and the green scallions
