shrimp creole

serves 4

Ingredients

  • 2 tbl olive oil
  • 4 cloves garlic minced
  • 1 large onion diced
  • 2 stalks celery diced
  • 1 carrot diced
  • 1 green pepper diced
  • 1 tsp cayenne pepper
  • 2 cups chicken stock
  • 1 28 oz . can diced tomatoes
  • 2 bay leaves
  • worcestershire sauce
  • hot sauce
  • salt & pepper
  • 1 lb . bag of frozen peeled and deveined shrimp thawed
  • 4 scallions diced

Instructions

  1. heat olive oil and saute garlic, onions, celery, carrot and green pepper for 5 minutes until soft
  2. add cayenne and stir to combine for 1 minute
  3. add stock, tomatoes, bay leaves, some worcestershire and hot sauce and salt & pepper
  4. cook on low for 20 minutes
  5. add shrimp and cook for 5 minutes until cooked through
  6. remove bay leaves and top with scallions
