shrimp ceviche

Ingredients

  • 1 lb raw shrimp peeled, deveined and cut into small pieces
  • 1 cup lime juice about 6 limes, divided
  • ½ cucumber peeled, seeded and chopped
  • ½ red onion diced
  • 1 large tomato diced
  • 1 serrano or jalapeño pepper diced
  • ½ cup cilantro chopped
  • salt & pepper

Instructions

  1. mix shrimp with ½ cup lime juice and let sit to “cook” for 15 minutes
  2. mix remaining ½ cup lime juice with cucumber, red onion, tomato, serrano pepper and cilantro
  3. mix shrimp and vegetables and season with salt & pepper

Recipe Notes

you can buy a 1 lb bag of frozen shrimp and defrost it under cool running water while you squeeze the limes, then cut the veggies in the 15 minutes it takes the shrimp to marinate and cook in the lime juice
