ravioli with a quick tomato sauce

Ingredients

  • 2 bags Andrea Ravioli®
  • 6 tablespoons salted butter
  • 2 cups cherry tomatoes
  • ½ tsp italian seasoning
  • 1/2 cup basil cut into thin strips
  • salt & pepper
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. cook ravioli in boiling salted water
  2. melt butter in a large sauce pan
  3. add cherry tomatoes and cook until butter browns and tomatoes are soft, 7-10 minutes
  4. mash tomatoes with a potato masher or the back of a spoon
  5. add italian seasoning, salt & pepper and simmer for 3 minutes
  6. add basil
  7. drain ravioli
  8. serve sauce over ravioli topped with grated parmesan cheese

Recipe Notes

I used tomatoes and basil from my garden and the sauce had a fresh summer taste!
