orecchiette with broccoli and sausage

Ingredients

  • 2 tbl olive oil
  • 1 lb italian sausage removed from casings
  • salt & pepper
  • 1 bunch broccoli tops
  • 1 box orecchiette
  • 1 shallot minced
  • 4 cloves garlic sliced
  • ½ tsp crushed red pepper
  • parmesan cheese

Instructions

  1. cook sausage in olive oil, breaking up pieces until browned, about 10 minutes
  2. remove sausage and reserve pan
  3. cook broccoli in boiling salted water for 3 minutes until bright green
  4. remove and drain under cold running water and drain again
  5. chop broccoli into bite sized pieces
  6. cook orecchiette in broccoli water
  7. saute shallots and garlic in reserved pan and add hot pepper flakes
  8. add broccoli and salt & pepper and cook 4-5 minutes
  9. add sausage to pan
  10. drain orecchiette and reserve some pasta water
  11. add pasta and reserved water to pan and stir to combine
  12. serve with freshly grated parmesan cheese

Recipe Notes

this recipe can easily be stretched be adding more pasta. I used half sweet-half hot sausage.
