bowtie pesto pasta salad

Ingredients

  • ½ lb bowtie pasta
  • 1 head romaine lettuce
  • ½ of a 12 oz. jar roasted pepper strips drained
  • 1-8 oz . block mozzarella cheese cut in ½ inch dice
  • 1-8.5 oz . can artichoke hearts cut in ½
  • 3 tbl pesto
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • 1/3 cup water
  • 1 package good seasons salad dressing mix

Instructions

  1. boil water and cook pasta
  2. cut lettuce into bite size pieces
  3. toss lettuce, roasted peppers, mozzarella and artichoke hearts together
  4. drain pasta and rinse with cold water and drain again
  5. add pasta to salad
  6. mix pesto, olive oil, red wine vinegar, water and salad dressing mix together
  7. toss salad with dressing

Recipe Notes

this is a great salad that can be made ahead by tossing the pasta with 1/3 cup of the dressing and keeping it separate from the rest of the salad. when ready to serve toss the salad with the pasta and the dressing (you may not need all of it).
