roasted chicken dinner

Ingredients

  • 1 whole chicken cut-up
  • salt & pepper
  • 2 tablespoons butter melted
  • 1 head garlic cut in half
  • 4 carrots cut in 1/2
  • 1 sweet potato cut in 1/8’s
  • 1 large white potato cut in ¼’s
  • 2 onions cut in ¼’s
  • 1 bunch fresh thyme

Instructions

  1. preheat the oven to 425-degrees
  2. salt and pepper the chicken
  3. place chicken on 2 sheet pans lined with parchment or foil
  4. brush chicken with ¾ of the melted butter
  5. scatter garlic, carrot, potatoes and onions around chicken
  6. drizzle vegetables with the remaining butter and salt & pepper
  7. scatter the thyme over everything and bake 30-40 minutes turning the vegetables ½ way through cooking

Recipe Notes

Have the butcher at the supermarket cut the chicken breasts in 1/2 so everything will cook more evenly, and they do it for free!
