chicken scampi

Ingredients

  • 1 lb boneless chicken breasts cut into 1 inch chunks
  • ½ cup flour
  • 1 tsp garlic powder
  • salt & pepper
  • 1 stick butter
  • ¼ cup olive oil
  • 3 cloves garlic sliced
  • ½ cup white wine
  • ¼ tsp crushed red pepper flakes
  • 1 tsp oregano
  • ½ cup chicken broth
  • 2 lemons 1 sliced and 1 juiced and zested
  • ¼ cup chopped parsley

Instructions

  1. season flour with garlic powder, salt & pepper
  2. dredge chicken pieces in flour and shake off
  3. heat butter and olive oil in a large skillet
  4. cook chicken until browned
  5. add garlic and saute for 2 minutes
  6. add wine and cook until thickened
  7. add hot pepper flakes, salt, pepper, oregano, chicken broth, lemon zest and lemon juice
  8. bring to a simmer and pour over angel hair pasta
  9. top with parsley and sliced lemon to serve
