classic macaroni salad

Ingredients

  • ½ box elbow macaroni
  • ½ cup mayo
  • 1/8 cup white vinegar
  • 1/3 cup sugar
  • 1 tbl yellow mustard
  • salt & pepper
  • ½ onion finely diced
  • 1 stalk celery finely diced
  • ½ red pepper finely diced
  • 1 carrot grated

Instructions

  1. cook elbow macaroni in boiling salted water
  2. mix mayo, white vinegar, sugar, yellow mustard, salt & pepper in a bowl
  3. when macaroni is cooked cool under running water and drain
  4. add to sauce and add onion, celery, red pepper and carrot.
  5. add salt & pepper
  6. refrigerate until ready to serve
