corn tomato and red onion salad

Ingredients

  • 4 ears fresh corn on the cob
  • ½ small red onion diced
  • 2 tomatoes diced
  • 2 tbl red wine vinegar
  • 4 tbl olive oil
  • salt & pepper
  • 8 large basil leaves slivered

Instructions

  1. preheat grill to high
  2. grill corn 8-10 minutes until charred on all sides
  3. let corn cool for 10 minutes
  4. cut corn off the cob
  5. add red onion, tomatoes, red wine vinegar, olive oil salt & pepper and basil and toss
  6. serve at room temp or refrigerate until ready to serve
