double cheese burgers with special sauce

Ingredients

  • 1 lb chopped meat 80-85% lean
  • potato rolls
  • iceberg lettuce
  • pickles
  • red onion
  • american cheese

special sauce

  • ½ cup mayo
  • 2 tbl french dressing
  • 1 tbl relish
  • 2 tsp finely chopped shallots
  • 1 tsp lemon juice
  • salt and pepper

Instructions

  1. form chopped meat into 8 equal thin patties and salt and pepper
  2. chop lettuce
  3. thinly slice red onion
  4. mix together all the ingredients for the special sauce and set aside
  5. toast rolls on grill on in skillet with a little butter until browned
  6. grill burgers on a pre-heated grill or cast iron skillet for 2-3 minutes on the first side
  7. flip burgers and put cheese on each patty
  8. spread special sauce on bottom roll
  9. place two cheese burgers atop each other on the toasted roll and add chopped lettuce, onion and pickles.
