white chicken chili

Ingredients

  • 1 tbl canola oil
  • 1 jalapeño pepper minced
  • 2 poblano peppers diced
  • 1 onion diced
  • 3 cloves garlic minced
  • salt & pepper
  • 1 tbl cumin
  • 1 tbl chili powder
  • 1 carton chicken broth
  • 1 can white beans
  • 2 limes juiced, plus 1 cut in wedges
  • ½ cup cilantro chopped
  • 1 rotisserie chicken
  • ½ cup of masa mixed with ½ cup water to make a paste
  • tortilla chips

Instructions

  1. saute jalapeño pepper, poblano pepper, onion and garlic in canola oil for 5 minutes
  2. add salt & pepper, cumin and chili powder
  3. saute for 1 minute until fragrant
  4. add chicken broth and bring to a simmer
  5. add lime juice, ¼ cup cilantro, beans and their juices and simmer for 5 minutes
  6. add chicken and masa paste and simmer for 5 minutes until thickened
  7. serve topped with cilantro, tortilla chips, sour cream and lime wedges
