angel hair pasta with lemon and cheese

Ingredients

  • 1 lb angel hair pasta
  • 1 tbl olive oil
  • 2 tbl butter
  • 2 tbl flour
  • 3 lemons thinly sliced and seeded
  • 3 garlic cloves minced
  • 3/4 cup chicken broth
  • salt & pepper
  • 1 cup parmesan
  • 1 1/2 cups grated gruyere
  • 1 cup locatelli
  • 1/4 cup chopped parsley

Instructions

  1. bring a large pot of salted water to a boil
  2. cook pasta according to al dente package directions and drain
  3. in a large skillet over low heat add 2 tablespoons olive oil and 2 tablespoons butter
  4. when butter starts to bubble add garlic and lemons
  5. season with salt & pepper and cook until lemons are softened, about 2-3 minutes
  6. whisk in flour and cook for 1 minute
  7. add chicken broth and whisk until smooth
  8. toss in cheeses while constantly whisking
  9. add cooked angel hair and toss in sauce with parsley, serve immediately
