meatballs with gravy and mashed potatoes

serves 4

Ingredients

  • 1 – 1 ½ lbs lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1 egg
  • 1/4 cup ketchup
  • 1/8 cup dijon mustard
  • 1 tbl worcestershire sauce
  • salt & pepper
  • ½ tsp garlic powder
  • 1 tsp onion powder
  • 2 tbl olive oil for frying
  • for gravy:
  • 2 tbl butter
  • 1 onion finely diced
  • 1 tbl worcestershire sauce
  • 1 cup beef broth or chicken broth
  • 2 tbl cornstarch
  • 1/2 tsp seasoning salt
  • 1 tbl ketchup
  • parsley for garnish

Instructions

  1. add all the meatball ingredients (excluding the olive oil) to a large bowl and mix well
  2. shape into 1 inch meatballs
  3. add the olive oil to a large skillet and heat over medium high heat
  4. add meatballs and cook the meatballs on all sides, add more oil if needed
  5. remove meatballs from skillet and set aside
  6. to the same skillet add butter and melt
  7. add onion and cook until onion is soft and translucent
  8. in a bowl add the cornstarch and beef broth and whisk
  9. add broth and remaining gravy ingredients to skillet, and cook for about 3 to 5 minutes, sauce should thicken
  10. if the sauce is too thick add a bit more beef broth
  11. taste for seasoning and adjust as necessary
  12. when the gravy is done add the meatballs back to the skillet and toss them around so they're covered in the gravy.
  13. garnish with parsley.
  14. serve over mashed potatoes
