sausage carbonara

Ingredients

  • 1 lb ziti rigati
  • salt & pepper
  • 1 lb italian sausage casings removed, crumbled
  • 4 slices pancetta or bacon diced
  • 1 tbl olive oil
  • ¼ cup parmesan or locatelli cheese
  • 2 eggs beaten
  • chopped parsley

Instructions

  1. boil salted water
  2. cook the pasta to al dente, reserve 1 cup of the pasta water
  3. cook the sausage and pancetta in the olive oil until browned and cooked through
  4. drain the pasta and toss with the sausage and pancetta until coated with the oil, 1 minute
  5. mix the egg and the cheese
  6. turn off the heat from the pasta and mix in the egg and cheese and season with salt & pepper
  7. add reserved pasta water as needed and mix until creamy
  8. top with chopped parsley and serve
