boil salted water

cook the pasta to al dente, reserve 1 cup of the pasta water

cook the sausage and pancetta in the olive oil until browned and cooked through

drain the pasta and toss with the sausage and pancetta until coated with the oil, 1 minute

mix the egg and the cheese

turn off the heat from the pasta and mix in the egg and cheese and season with salt & pepper

add reserved pasta water as needed and mix until creamy

top with chopped parsley and serve
