dijon pork chops

Ingredients

  • 1 tbl butter
  • 1 tbl canola oil
  • 4 pork chops
  • salt & pepper
  • ¼ cup chopped shallots or scallions
  • ½ cup white wine
  • ¾ cup chicken stock
  • ½ cup heavy cream
  • 1 ½ tbl dijon mustard
  • 1 tbl chopped parsley

Instructions

  1. melt butter and oil in a skillet
  2. season pork chops with salt & pepper
  3. cook pork chops over high heat browning on both sides 2-3 minutes
  4. remove pork chops and pour off most of the fat
  5. saute shallots for 1 minute until soft
  6. add wine and boil, scraping up the brown bits on the bottom of the pan
  7. add stock and return pork chops to the pan
  8. cover pan and simmer for 10 minutes, until pork chops are cooked through
  9. remove pork chops to a serving dish and cover with foil
  10. add cream and boil 2 minutes until thick
  11. turn off heat and add mustard and parsley, stir until smooth
  12. pour sauce over pork chops and serve
