fresh pasta with arugula, tomatoes and shaved parmesan

Ingredients

  • 2 oz . parmesan cheese
  • 1 bag arugula
  • 4 plum tomatoes diced
  • ¼ cup olive oil
  • 1 lb fresh fettuccine
  • salt & pepper

Instructions

  1. bring a pot of salted water to a boil
  2. shave parmesan cheese into long strips with a vegetable peeler
  3. place shaved parmesan in a warm bowl
  4. cook pasta according to directions
  5. add arugula, tomatoes and olive oil to the bowl and toss
  6. drain the pasta and add to the bowl and toss
  7. season with salt & pepper
