ciabatta burger

serves 4

Ingredients

  • 1 ½ lbs ground beef
  • 1 onion sliced thin
  • 5 tbl olive oil divided
  • 1 tbl butter
  • 4 ciabatta rolls
  • 4 slices mozzarella cheese
  • 1 tomato
  • 1 bag arugula
  • 2 tbl tomato paste
  • 4 tbl balsamic vinegar
  • 1 clove garlic minced on a microplane
  • 1 tsp sugar
  • salt & pepper

Instructions

  1. preheat the grill
  2. form the ground beef into 4 square patties the size of the ciabatta rolls
  3. season with salt & pepper
  4. heat 1 tbl olive oil and butter in a pan
  5. add onions and cook slowly for 10 minutes on low to caramelize, turning as needed
  6. mix tomato paste, 4 tbl olive oil and 4 tbl balsamic vinegar in a jar with garlic, sugar, salt & pepper
  7. shake dressing and pour over lightly salted arugula and toss
  8. slice rolls
  9. grill burgers, rolls and tomato until cooked
  10. top with mozzarella cheese and close cover to melt
  11. top toasted bottom bun with cheeseburger, grilled tomato, caramelized onions, arugula and top bun
