chicken savoy

Ingredients

  • 1 chicken cut-up
  • salt & pepper
  • 3 tbl olive oil
  • 4 cloves garlic
  • 1 tbl dried oregano
  • 1 tsp dried thyme
  • 1/3 cup grated locatelli cheese
  • 1 cup red wine vinegar

Instructions

  1. salt & pepper chicken pieces
  2. heat in 1 tbl oil in a cast iron skillet
  3. place in the skillet skin side down and saute till skin is golden brown.
  4. blend together the 2 tbl olive oil, the garlic, the oregano, the thyme and the cheese in a paste.
  5. turn chicken skin side up and spread evenly over the skin of the chicken.
  6. transfer skillet to a 500-degree oven and bake 20-30 minutes until done.
  7. remove from oven - pour off the fat
  8. add 1 cup of red wine vinegar to the pan.
  9. deglaze and bring to a boil
  10. spoon sauce over the chicken.
  11. serve chicken with the vinegar sauce.
