oven roasted green beans in a tomato vinaigrette

Ingredients

  • 1 package green beans
  • 2 tbl tomato paste
  • 4 tbl olive oil
  • 4 tbl balsamic vinegar
  • 1 clove garlic minced on a microplane
  • 1 tsp sugar
  • salt & pepper

Instructions

  1. preheat oven to 450 degrees
  2. spread green beans on a cookie sheet and drizzle with a little olive oil and salt & pepper
  3. mix and spread out and roast for 10 minutes
  4. mix tomato paste, 4 tbl olive oil and 4 tbl balsamic vinegar in a jar with garlic, sugar, salt & pepper
  5. shake dressing and pour over beans, toss and serve
