meatloaf sandwiches

Ingredients

  • ½ small onion minced
  • 1 clove garlic minced
  • 1 tbl olive oil
  • 12 saltines crushed
  • ¼ cup milk
  • 1 egg
  • 1 tsp dijon mustard
  • 1 tbl worcestershire sauce
  • 1 tsp hot sauce
  • 1/3 cup ketchup
  • 1 tsp garlic powder
  • salt & pepper
  • ¼ cup chopped parsley
  • 1 lb meatloaf mix or ground beef or ground turkey
  • glaze:
  • ½ cup ketchup
  • 4 tbl brown sugar
  • 3 tbl apple cider vinegar
  • 1 tsp garlic powder
  • sandwiches:
  • 4 potato rolls toasted
  • 4 slices sharp cheddar cheese
  • spicy pickles
  • 1 can french fried onions

Instructions

  1. preheat oven to 425 degrees
  2. saute onions and garlic in olive oil until translucent
  3. mix all the ingredients together and form 4 burger patties
  4. cook burgers in a cast iron skillet 3-4 minutes per side until browned on each side
  5. mix ingredients for the glaze and brush on the burgers
  6. put skillet in oven and cook 10-15 minutes more, brushing with glaze once more (save some for serving)
  7. top with cheddar cheese and return to oven for 1 minute to melt
  8. build meatloaf sandwiches by placing the burger on the toasted bun
  9. top with the remaining glaze, spicy pickles and french fried onions
