pasta arrabiatta

Ingredients

  • 6 tbl olive oil divided
  • 1-6 oz can tomato paste
  • 1 tbl crushed red pepper flakes
  • 1 can diced tomatoes
  • salt & pepper
  • 1 lb pasta
  • parmesan cheese for serving

Instructions

  1. cook pasta in boiling salted water until al dente, reserving ¼ cup pasta water
  2. heat 4 tbl olive oil in a large pan
  3. cook tomato paste and red pepper flakes for 3-5 minutes on low
  4. add tomatoes and simmer for 10 minutes while the pasta cooks
  5. add pasta and reserved water to the sauce and stir until combined, 1 minute more
  6. add remaining 2 tbl olive oil and toss again
  7. serve topped with grated cheese
